To stop oxidation, you apply heat — steaming or pan-firing — which deactivates the enzymes and “locks in” whatever state the leaf is in. Do it immediately, and you get green tea. Matcha — Why It’s in a League of Its Own

Oxidation: none — plus two special twists. Matcha is a type of green tea, so like all green tea its oxidation is halted early. But two things make it unique: how it’s grown, and how it’s consumed.
Twist #1 — It’s shade-grown. For roughly the last 20–30 days before harvest, matcha plants are covered and shaded from direct sun. This is the secret behind matcha. Deprived of full sunlight, the plant produces more chlorophyll (that vivid green color) and — crucially — more amino acids, including L-theanine, the compound responsible for tea’s calm focus.
Twist #2 — You drink the whole leaf. With regular green tea, you steep the leaves in water, extract some of their compounds, and throw the leaves away — sending much of the catechins and L-theanine to the compost. Matcha is different: the shaded leaves are stone-ground into a fine powder that you whisk into water and drink entirely. Nothing is discarded.
